Egg Salad

Egg Salad 

Yield: 2 People
3 eggs (hard boiled)
2 Tbsp Mayonaise
¾ Tsp of Mustard
¼ Tsp Salt
¼ tsp Black Pepper
2 Large Slices of  Toasted Ciabatta Bread
Method
Place shelled eggs into a medium bowl, add the mayo, mustard, black pepper and salt. With the back of an eating fork crush the egg mixture together and incorporate to make a paste. Taste for salt and for any additional seasonings. Place toasted bread slices on two saucers and add the egg salad on each slice, using a knife to lightly spread over the surface area of the bread.
Serve and enjoy!
