Salmon Frittata with dill sour cream and cucumber Sauce by Chef Jason Peru

Ingredients Needed For Salmon

  • 4 Oz of Atlantic Salmon
  • 1 Tsp of Maggi Season Up Fish
  • 1 Tbsp of Vegetable Oil

Ingredients Needed For Frittata

 

  • 3 Tbsp of Vegetable Oil
  • 3 Cloves minced garlic
  • ¼ Cup of Purple Onion Minced
  • 3 Tbsp of Fine Diced Pimentos
  • 4 Tbsp of Chopped Celery
  • ½ Cup of par boiled – small diced potato
  • 3 Tbsp of Red Bell Peppers
  • 3 Tbsp of Green Bell Peppers
  • 3 Tbsp of Yellow Bell Peppers
  • 2 Tbsp Diced Mushroom
  • ¼ Cup of Whole Kernel Corn
  • ¼ Tsp of Chili Powder
  • ¼ Tsp of Paprika
  • ¾ Tsp of Black Pepper
  • 6 Eggs
  • 2 Cups of Carnation Evaporated Full Cream Milk
  • 1 Pk of Maggi Season up, All Purpose
  • 2 Tbsp of Chopped chives
  • 2 Tbsp of Chopped Parsley
  • ½ Cup Cheddar Cheese
  • ½ Cup of Cream Cheese

Ingredients Needed For Dill Yogurt Sauce

  • ½ cup of Grated cucumber,  and excess water squeezed out
  • ½ cup  sour cream
  • ½ cup plain yogurt
  • 2 Tsp. chopped fresh dill, plus extra sprigs for garnish (optional)
  • 1 Tbsp lemon juice
  • Dash of Black Pepper

Methods

For the Salmon

  • In a medium skillet, Heat 1 Tbsp of Vegetable oil on high heat.
  • Season Salmon on both sides with Maggi Season up Fish and place it inside the skillet.
  • Cook 2 Minutes on each side and Remove and place on napkin to rest away from heat.
  • When cool, flake into bite size pieces and set aside in a bowl.

For the Frittata

  • Preheat Oven to 350 Degrees Fahrenheit
  • In a medium bowl, whisk the eggs, evaporated milk and Maggi season up, all purpose, the cream cheese, half the cheddar cheese and set aside.
  • In a medium skillet, Heat 3 Tbsp of Vegetable oil on high heat.
  • Add garlic and onions, pimentos and sauté for one minute. Add potatoes, mushroom, celery and corn and continue to sauté, Lower heat and add the peppers, chives and parsley. Season with chili powder, paprika and black pepper.
  • Add the flaked salmon to the skillet, followed by the egg mixture to the pan with the ingredients and sprinkle the remaining cheddar cheese on top.

Continue to cook Frittata on stove top for for 8 – 10 Minutes on low heat until eggs begin to firm up slightly and then place in oven for 10 – 12 minutes or until cheese is melted and frittata is set firmly and cooked. Remove skillet from oven and let sit for 15 Minutes before cutting.

 For The Dill Yogurt Sauce

  • In a small bowl, stir together the cucumber, sour cream, yogurt, dill, lemon juice, and pepper to taste. Set aside.
