Tamarind & Beer Braised Shrimp

Tamarind & Beer Braised Shrimp

Ingredients

  • 4 cloves garlic, finely chopped
  • 1/3 cup chopped celery, stems and Leaves
  • 1  large onion, chopped
  • 2 tablespoons chopped fresh thyme, finely chopped
  • 4 tablespoons butter
  • 2 medium green bell peppers, seeded and chopped
  • Salt and freshly ground black pepper
  • ½ Cup of Chopped Tomatoes
  • 3 Tbsp of Fresh Lime Juice
  • 1 ½  pounds large shrimp deveined, tail on
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup Tamarind Jam or Chutney
  • 1 bottle beer
  • 1 bunch scallions, thinly sliced on an angle

Procedure

In a medium bowl combine the garlic, celery, peppers, onions and thyme.

Season shrimp with crushed black pepper and salt.

Heat a medium pot with 3 tablespoon butter and some oil over medium heat. Add the vegetables to the pot, sauté 2 to 3 minutes.  Add the beer and tamarind jam and bring to boil and simmer until half its quantity, (About four minutes ) Add seasoned shrimp and toss.  Continue to toss shrimp. Add chopped tomatoes, Worcestershire sauce. Mix thoroughly and allow to cook until sauce slightly becomes thick, about 5 minutes. Add chopped chives, remaining butter and lime juice and remove from the stove.
