Spicy Cous Cous

Ingredients

  • ¼ cup Red bell peppers (Medium diced)
  • ¼ cup of Green bell peppers (Medium diced)
  • ¼ cup of apples ( Fine Diced )
  • 3 Tbs. of Apricots ( Fined Diced )
  • 2 Tbs. of Slivered Almonds
  • 1 1/2 cups couscous
  • 3 cups Hot Vegetable stock
  • ½ tbsp of minced garlic
  • 1/3 tbsp of minced onion
  • 1/2 teaspoon roasted cumin
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon Chili Powder
  • ¼ Tsp Cinnamon
  • 1 tablespoon roughly chopped parsley
  • 2 tablespoons roughly chopped cilantro
  • 3 tablespoons olive oil
  • 1/2  lemon, grated zest and juice
  • Salt and pepper to taste.

Procedure

Heat stock to boiling point. Remove from stove. Place couscous in a bowl and pour the hot stock over it .Cover the couscous with plastic wrap and let stand for 10 minutes.

In a sauté pan heat 3 tbsp of olive oil and add the minced onion and garlic to it. Sauté gently. Add the Red & Green Bell Peppers, apricots, and almonds. Sauté for 2 minutes seasoning with salt and black pepper, lemon juice and zest. Add Roasted cumin, Ginger, chili powder and cinnamon and stir. Remove from stove and set aside.

Remove the plastic wrap from the couscous bowl, and fluff the couscous with a fork until it becomes puffy. Add the sautéed vegetables to the couscous as well as the parsley, cilantro, and diced apples. Mix thoroughly and season with salt and black pepper to taste.
