Honey and Thyme Infused Christmas Ham

What will Christmas be without a delicious savory and succulent ham? After all its one of those ubiquitous items that resonates the Season is here. After all Marcia Miranda said it best, when she sung out loud, “Neighbour Woi Woi Woi Bring out de ham” lol. But today we’re surely gonna bring out the ham, as we venture to do a Honey and Thyme Infused Christmas Ham for the holidays a recipe by Chef Jason Peru. Trust me this Thyme and Honey glaze is sure to win this season.

 Ingredients:

·         1 Large Shoulder Ham

·         10 Cloves

·         1 Cup of Brown Sugar

·         ½ Cup of Honey

·         4 Tbsp of Minced Fresh Fine Thyme

 Method

 Preheat Oven to 350 Degrees Fahrenheit

Place Shoulder ham on a flat sheet pan. With dry napkins, swab and dry the outer surface area of the ham and ensure it is dry all round. In a slightly shallow and wide baking tray, line the inner base with two layers of foil. Place ham in the baking tray with the most protruding part sticking up.

With a small paring knife, stick slight holes into the surface fat cap of the ham and gently push one clove in each hole. (Do not put too much cloves as this can have an overwhelming flavor )

Cover ham with foil properly. Now based upon the weight of the ham, you want to cook (each Lb for 18 Minutes). Let’s say your ham is 10 Lbs then that will be 180 minutes or 3hrs.

Place ham in the hot oven to cook.

Now while that’s baking, let’s make the thyme and honey glaze.

In a medium bowl, add the honey, thyme and brown sugar and mix until combined.

In the last 20 – 30 minutes of cooking time, remove the foil of the ham and apply the Honey and brown Sugar Thyme scented Glaze by brushing on. Do this evenly with a brush and place back in oven to finish cook or until the internal temperature of the ham reaches 150 Degrees Fahrenheit by sticking a cooking thermometer in the centre of the ham.  Remove from oven and let sit for half hour before cutting.

Your ham is ready and once cool, slice and place in freshly bake homemade bread and top with some chow chow. Enjoy!
