- 6 Eggs
- ½ Cup Evaporated Milk
- 3 Tbsp of Cheddar Cheese
- ½ Cup of Chopped baby Spinach
- 1 Tbsp of Butter
- ¾ Tsp Salt
- ¾ Tsp Black Pepper
In a medium mixing bowl, crack the eggs, add the evaporated milk, cheese and whisk until combined. Mix in the spinach and season with salt and pepper.
Place a medium skillet over low heat, add butter. When melted add the egg mixture. Using a rubber spatula, gently scramble the eggs stirring until its cooked through and still moist, about 4 minutes.
Remove and serve with toasted bread or bagels.
