Green Pea Pesto Panini 

Who says we can’t be ultra fancy when we fast for Diwali. Here’s a delightful and ultra tasty Panini that uses green peas to make a pesto paste for a sandwich.

Ingredients Needed: 

1 (10-ounce) package frozen peas, defrosted
1 garlic clove
½ cup grated Parmesan
1 teaspoon salt, plus extra for seasoning
½ teaspoon freshly ground black pepper, plus extra for seasoning
1/3 cup olive oil

Two slices of Bread or Even a quarter of sada roti.

Method

For the pea pesto:

Pulse together the peas, garlic, Parmesan, salt and pepper in a food processor. With the machine running, slowly add the olive oil until well combined, about 1 to 2 minutes. Season with additional salt and pepper, if needed. Transfer to a small bowl and set aside.

For the Panini:

Brush both sides of the sliced bread with butter and add a generous amt of pesto paste on side of the bread. Cover the sandwich with the other slice and place in a Panini machine for four minutes or in a toaster oven and toast until crisp. Enjoy with a cup of Hot Chocolate
